There was an old flower (hua) squatting next to him. Zhu Yuanzhang asked curiously: "What are you doing here?" The old flower (hua) saw that it was Zhu Yuanzhang, and said hurriedly: "I'm baking. The chicken is dedicated to the king." Zhu Yuanzhang was very surprised when he heard that, the old beggar took the chicken out of the fire, opened the mud, and the smell was tangy. Zhu Yuanzhang was full of praise while eating, "very delicious." From then on, Zhu Yuanzhang fought smoothly and became emperor. Later, Zhu Yuanzhang named this chicken "rich chicken".

How to cook beggar's chicken

Step 1. Using a fresh lock bag, pour 80g of water, 50g of light soy sauce, 10g of oyster sauce, 10g of cooking wine, 5g of sesame oil, 7g of salt, 3g of chicken essence, and 3g of fine sugar.

Step 2. Put 1 green onion, a few slices of ginger, and a few cloves of garlic.

Step 3. Put the processed Qingyuan chicken into a fresh lock bag, seal and marinate for more than 2 hours.

Step 4. Remember to set aside some seasoning juice for marinating onions and mushrooms.

Step 5. Stuff the marinated onions and mushrooms into the marinated chicken belly.

Step 6. Wrap the chicken with tin foil.

Step 7. Mix 400 g of flour, 160 g of water, and 50 g of white wine.

Step 8. Knead into a rough dough, cover with plastic wrap and relax for 1 hour.

Step 9. Roll the dough into a large dough.

Step 10. Wrap the roast chicken together with tin foil with pastry.

Step 11. Put it in the oven and bake at 200 degrees for 2 hours.

Step 12. Knock open the shell after it is out of the oven.

Step 13. The super tender and crispy beggar's chicken is ready.

Tips:

If you want to eat chicken with a crisper skin, braise it for a while, preferably 40 minutes. When the seasoning is applied, the surface of the chicken is cut with a knife to make it easier to taste.
